Every year I make pumpkin pie. It is one of my favorites. Each year I face the challenge of trying to fit the pumpkin pie filling in one 9-inch and one 12-inch pie without spilling or overflowing. While I have mastered the art of keeping messes to a minimum, this year I tried something different. Instead of using just two pin tins, I decided to spread the filling between
three pie tins. Sweet victory! The recipe made three, beautiful, pumpkin pies without overflowing or being too runny. It only took 10+ years to figure out a better way to spread the filling evenly and cleanly, but I will remember it for future years. Good thing I like pumpkin pie.
